Orange Cake with Almonds

This is a moist and flavorful gluten-free cake. The ground almonds make this cake gluten-free, while giving it a wonderful crumbly texture.

3 large unpeeled oranges
6 eggs, separated    
1 cup unrefined Demerara or turbinado sugar
2 cups ground almonds or almond meal    
1 tsp. baking powder
1/4 cup slivered almonds
Confectioners' sugar, for dusting

1.  Place whole oranges in a saucepan, and cover with 2 inches of water.  Boil 30 minutes, or until soft.  Drain oranges, discard 
     water, and cool.
2.  Preheat oven to 350 degrees and line bottom & sides of 9-inch springform cake pan with parchment paper.
3.  Quarter cooked oranges & remove seeds.  Pulse oranges (skin and all) in food processor until finely chopped.  Set aside.
4.  Whisk together egg yolks and sugar in large bowl 4 minutes or until mixture is thickened & pale yellow.  Stir in orange pieces         Fold in ground almonds.
5.  Beat egg whites with electric mixer until soft peaks form.  Fold egg whites into cake batter, then fold in baking powder.  
     Spread batter in prepared pan, sprinkle with slivered almonds.       
6.  Bake 60 min or until cake is golden and toothpick inserted in center comes out clean.  Cool in pan.  Unmold, then dust with
     confectioners' sugar before serving.
