Oatmeal Cookies with Fruit and Nuts

3 cups rolled oats (not quick)
1 cup all purpose flour
3 cups total dried fruit and nuts, finely chopped (any combination of dried apricots, raisins, prunes, cherries, cranberries, candied ginger, walnuts, almonds pecans, pumpkin seeds, etc)
1 tsp salt
1 tsp baking soda
3/4 cup vegan margarine
1 cup brown sugar
1/2 cup white sugar
1/2 cup liquid egg white
2 tsp vanilla
Preheat oven to 350. Cream margarine and sugars in electric mixer. Add vanilla and egg white. In large bowl sift dry ingredients. Add oats, fruit, and nuts, tossing to coat and making sure fruit pieces don't stick together. Add to creamed mixture and combine well. Drop by large teaspoon full onto baking sheet lined with parchment or silicone mat. Flatten each cookie slightly. Bake 12-14 minutes, rotating sheets half way. Cool for 5 minutes on sheets then transfer to cooling rack.
