Banana bread

1 cup banana, mashed
3/4 cup walnuts and almonds in equal amounts, toasted and chopped
1 cup rolled oats
3/4 cup oat flour
1/2 cup spelt flour
3/4 cup turbinado sugar
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp powdered egg replacer in 1/4 cup water
1/4 cup applesauce
1/4 cup vegan margarine
1/2 cup plain soy yogurt
1 tsp vanilla extract

Preheat oven to 350. Grease one 9x5 inch loaf pan. MIx flours, sugar, baking powder, salt, baking soda, cinnamon, and nutmeg in a large bowl, add nuts and oats. In a medium bowl whisk egg replacer in water with the applesauce, margarine, yogurt, and vanilla. Stir in banana. Fold wet ingredients into dry mixture just until combined. Spread batter into prepared pan and bake until a toothpick inserted in the center comes out clean, about 55 minutes. Cool 30 minutes in pan on a rack, then turn onto rack to cool completely.
